The Hirame Experience
Hirame (鮃) is the Japanese name for a type of flatfish (olive flounder/bastard halibut). It is a highly versatile shiromi (white-flesh fish) that offers: 
  • Flavor Profile: A clean, mild, and slightly sweet flavor with a subtle hint of the ocean. The taste is delicate and refined, making it a favorite for connoisseurs.
  • Texture: Firm yet tender, with a uniquely springy and elastic texture that is a hallmark of quality Hirame. The muscle near the fins, known as engawa, is a prized cut with a rich, slightly crunchy texture.
  • Seasonality: While farm-raised fish offer consistent quality year-round, Hirame is traditionally at its peak flavor in colder months when the fat content increases, enhancing its richness. 
The "Ikejime" Difference: Peak Freshness and Flavor 
Our Hirame is harvested using the traditional, meticulous Japanese Ikejime (活け締め) method. This process is paramount to achieving the highest quality seafood. 
Why Ikejime is superior:
  • Minimizes Stress: The fish is humanely and instantaneously euthanized by spiking the hindbrain, preventing the release of stress hormones (cortisol and lactic acid) that can degrade the meat.
  • Preserves Quality: Immediate bleeding and spinal cord destruction (Shinkei-jime) slow down the onset of rigor mortis and decomposition. This preserves the fish's natural color, texture, and flavor for a significantly longer period.
  • Enhances Umami: By preventing early decay, the Ikejime process allows the natural umami compounds to develop, resulting in a deeper, richer flavor profile when aged briefly.
  • Ethical Sourcing: This practice honors a Japanese tradition that prioritizes the welfare of the fish and maximizes the culinary value of the catch.

  • Pre-order Deposit: To accommodate these variations, prices are initially set based on the maximum expected weight. A 20% deposit is charged at the time of your pre-order to secure your purchase.
  • Final Capture & Remaining Balance: Once the actual weight is confirmed after sourcing and shipping from Japan, we will capture the exact amount for the final, correct price.
  • Effective Refund for Excess: This process ensures you only pay for what you receive. Any excess amount from the initial estimate is simply not captured (functioning as an effective refund).
