Introducing "Miyabi-dai" (雅鯛), an exclusive, high-quality brand of Japanese Sea Bream (Madai) farm-raised in Kumamoto Prefecture, Japan. This premium fish is harvested using the traditional Ikejime method, ensuring peak freshness, flavor, and texture for a truly exceptional culinary experience.
The Miyabi-dai Difference
"Miyabi" in Japanese often translates to elegance or grace, perfectly describing this refined fish. Our farm-raised Miyabi-dai is renowned for its specific qualities:
  • Outstanding Sweetness: The primary characteristic is an outstanding natural sweetness that is immediately apparent upon the first bite.
  • Minimal "Fishy" Flavor: The producers focus on creating a low-stress environment and a specialized diet, resulting in a barely-fishy, remarkably clean flavor profile.
  • Texture: Possessing the firm-yet-tender texture characteristic of high-quality Japanese sea bream (Madai), making it perfect for delicate preparations.
  • Versatility: A versatile shiromi (white-flesh fish) ideal for sashimi, sushi, grilling (especially shioyaki or salt-grilled), steaming, or pan-frying.
The "Ikejime" Method: Preserving Perfection
Every Miyabi-dai is processed using the meticulous Japanese Ikejime (活け締め) technique. This is considered the most humane and effective method for processing fish, enhancing quality and shelf life.
Key benefits of Ikejime:
  • Minimizes Stress Hormones: Rapid processing prevents the buildup of cortisol and lactic acid, which can degrade flavor and texture.
  • Superior Freshness: The method significantly slows decomposition, keeping the flesh pristine for longer than conventionally processed fish.
  • Enhanced Umami: A properly ikejime'd fish develops a deeper, cleaner umami flavor profile.
Sourced from Kumamoto, Japan
Our Miyabi-dai are raised in carefully controlled environments in Kumamoto, Japan, where producers prioritize kodawari (dedication to quality) in every aspect of farming, from feed to harvest.
